Ingredients

  • 2 Tbsp. melted butter
  • 1/2 cup allulose (I used NOW Slender Zero Organic Allulose)
  • 1/4 cup sugar
  • 1/4 cup almond milk
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. orange extract
  • 2 large eggs, at room temperature
  • 1 1/4 cup almond flour
  • 2 Tbsp. coconut flour
  • 1 Tbsp. pysllium husk
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 2/3 cup fresh cranberries

Optional Glaze

  • 1/4 cup powdered sugar
  • 2 tsp. light orange juice


Instructions

  1. Preheat oven to 375 degrees F. Coat a loaf pan with cooking spray. (Alternatively, line with parchment paper.)
  2. Whisk together melted butter, allulose, sugar, milk, vanilla extract, orange extract, and eggs in a large mixing bowl.
  3. Whisk together almond flour, coconut flour, pysllium husk, baking powder, and salt in a medium separate bowl. Add to butter mixture, and stir until well combined. Fold in cranberries. Spoon batter evenly into prepared pan.
  4. Bake in preheated oven until loaf is golden brown and set, about 40 minutes. Let cool in pan 10 minutes. Remove to a wire rack to cool completely.

Notes

Pro Tip: This is a smaller loaf as it’s baking. Watch it closely for overbrowning and cover the loaf with aluminum foil during baking if the top browns too quickly.
