Looking for the perfect EASY dessert to make for St. Patrick’s Day? Let me introduce you to these *almost* two-ingredient Gluten Free Chocolate Mint Brownies:
(I say *almost* because technically you’re going to need some butter and an egg that’s called for on the box of brownies. But come to think of it, 4 Ingredient Gluten Free Chocolate Mint Brownies has a nice ring to it, too.)
I first learned this method of making a top layer chocolate ganache of sorts using Andes mints YEARS ago when I was working in the test kitchen for Southern Living cookbooks.
It’s pure brilliance, honestly.
Sure, creating a frosting layer for brownies isn’t overly complicated. But who can argue that unwrapping a few mints, letting them melt, and then smoothing them over the whole thing isn’t next-level easy?

It is with this ease in mind that I also opted to make these with a boxed brownie mix. King Arthur Flour and ALDI both make REALLY good gluten free brownie mixes. In fact, their mixes are so good that I’ve had people (who I served them to) tell me before that they thought the GF fudgy brownies were even better than a regular mix….
You may or may not agree, but I’m sure you’ll agree if you make these brownies, that this recipe is darn near foolproof. It’s the ultimate easy recipe and is quickly becoming one of my family’s favorite desserts. I hope it will be for you as well. ~Regan


Gluten Free Chocolate Mint Brownies
- Total Time: 1 hour
- Yield: 16 brownies

Description
Made with just a few ingredients, these Gluten Free Chocolate Mint Brownies are a huge hit among family and friends. Easy baking at its best!
Ingredients
- 1 (17-oz.) pkg. gluten free brownie mix (such as King Arthur Flour)
- 1 (4.67-oz.) pkg. creme de mint thins (such as Andes mints), unwrapped
Instructions
- Prepare brownie mix according to package directions in an 8- x 8-inch square baking pan. (I recommend lining your pan with parchment paper or aluminum foil coated with cooking spray for easy removal.)
- Remove brownies from oven, and top evenly with mint thins. Let stand 5 minutes.
- Using an offset spatula carefully smooth melted mint thins across top of the brownies to create a thin melted chocolate layer over the brownie layer. Let cool to room temperature, 20-30 minutes) before cutting cooled brownies into squares. Store in an airtight container
