Ingredients

  • 1 (22-oz.) box gluten-free classic yellow cake mix
  • 1 tablespoon lemon zest (from 1 lemon)
  • 4 large eggs, at room temperature
  • 1/2 cup butter, softened
  • 2 tablespoons oil
  • 2/3 cup milk
  • 3 tablespoons, plus 2 tablespoons lemon curd, divided
  • 1 (16-oz.) tub vanilla frosting
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Yellow food coloring (optional)


Instructions

  1. Preheat oven to 350 degrees F. Grease 3 (8-inch) round cake pans with butter or coat with non-stick spray; set aside.
  2. Add cake mix to a large bowl. Whisk in lemon zest. Prepare cake mix according to package directions using eggs, butter, oil, and milk. Divide cake batter evenly among prepared pans. Bake until a wooden pick or cake tester inserted into center of the cake comes out clean, about 18 minutes.
  3. Let cake cool in pans 10 minutes. Turn out onto a wire rack, and spread top of each cake round with 1 tablespoon lemon curd. Let cool completely.
  4. Meanwhile, prepare frosting: Add frosting, powdered sugar, remaining 2 tablespoons of the lemon curd, vanilla extract, and yellow food coloring, if using, to a large bowl. Beat until smooth and combined, 1 to 2 minutes.
  5. To assemble cake, place a single cake layer on a plate, lemon curd side up. Spread with about 1/4 cup of the frosting. Top with 2nd cake layer, lemon curd side up. Spread with about 1/4 cup of the frosting. Top with 3rd cake layer, lemon curd side up. Spread remaining frosting over top and around the sides of the cake. Store leftovers in an airtight container in refrigerator.
