What I love about these healthy oatmeal bars

The best part of these bars (aside from how easy peasy they are to make) is the layer of fresh blueberries that turn into something similar to homemade blueberry jam when baked in the oven. They’re healthier than blueberry pie bars, but very similar in taste!

Why does this recipe contain protein powder?

When I originally developed these bars, I wanted them to be suited for breakfast. The protein powder helps boost the protein content of these blueberry oat bars. (These are also a great option for a healthy snack!)

Can I substitute instant oats or steel cut oats for the old fashioned oats?

Instant oats should work. Steel cut oats won’t.

If it’s not blueberry season, are frozen blueberries ok to use in this recipe?

Yes, you should be able to use frozen blueberries in place of the fresh fruit called for in the recipe.

​Can I make these blueberry oatmeal bars gluten free?

I would suggest using gluten-free oat flour in place of the whole wheat flour and using certified gluten-free oats in place of the old fashioned oats.

Can I use coconut oil in place of the butter?

Yes, but you may notice a slight coconut flavor if you do. I would recommend possibly adding a little bit of fresh lemon zest to mask that flavor.

  • Cooking spray
  • 1/2 cup old fashioned oats
  • 2/3 cup light brown sugar, divided
  • 1 cup, plus 1 Tablespoon whole wheat flour, divided
  • 1/2 cup unflavored whey protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup cold, unsalted butter
  • 1 large egg, at room temperature and lightly beaten
  • 2 Tablespoons milk
  • 1 pint fresh blueberries


  1. Preheat oven to 375 degrees F. Coat an 8- x 8-inch pan or baking dish with cooking spray or line with parchment paper; set aside.
  2. Combine oats, 1/3 cup brown sugar, 1 cup flour, protein powder, baking powder and cinnamon in a large mixing bowl; cut butter into dry ingredients until mixture resembles coarse meal. Add egg and milk; mix until blended.
  3. Pat two-thirds of dough into prepared dish. Bake for 5 minutes.
  4. Meanwhile, combine remaining 1/3 cup brown sugar, blueberries and 1 tablespoon flour in a small bowl.
  5. Remove baking pan from oven; top with blueberry mixture. Divide remaining dough evenly over blueberry filling, pressing slightly into blueberry layer. Bake until top is golden brown, about 30 minutes.
  6. Allow to cool before cutting into squares. Store in an airtight container in refrigerator 2-3 days.
