The Best Stevia Cake Recipes: A Delicious & Sugar-Free Roundup

If you love baking but want to cut back on sugar, stevia is a fantastic alternative. This natural, zero-calorie sweetener lets you enjoy all the sweetness of cake without the sugar spike. Whether you’re looking for a light and fluffy vanilla cake, a rich chocolate indulgence, or a fruity delight, I’ve rounded up some of the best stevia cake recipes that you’ll love!
Why Bake with Stevia?
Stevia is a plant-based sweetener derived from the leaves of the Stevia rebaudiana plant. Unlike sugar, it has no calories and does not affect blood sugar levels, making it a popular choice for those watching their sugar intake. While sugar can still be part of a healthy diet, many consumers are looking for ways to reduce their overall sugar consumption, especially if they are following a low-carb diet.
Is Stevia Safe?
Studies show that stevia is safe for all ages, including children and pregnant women, and has no known adverse effects at typical consumption levels (EFSA Panel on Food Additives and Nutrient Sources added to Food, 2020; Carakostas et al., 2018; Roberts et al., 2016). Additionally, research suggests that stevia may help regulate blood sugar and support weight management without leading to increased calorie consumption later in the day (Anton et al., 2010; Goyal et al., 2010; Li et al., 2018). Its naturally sweet taste makes it a top choice among non-caloric sweeteners for both health-conscious consumers and those managing metabolic health. (It should be noted here that some people do experience a slight bitter taste with stevia due to genetic differences in taste perception. One of the best ways to overcome this is by blending stevia with other low/no-calorie sweeteners like monk fruit, erythritol, or allulose.)
Stevia and Gut Health
While some consumers have raised concerns about how stevia may affect gut health, research indicates that stevia is generally well-tolerated and does not negatively impact gut microbiota when consumed in moderation (Marcinek & Krejpcio, 2021; Wang et al., 2020). Unlike some low- or no-calorie sweeteners (most notably many sugar alcohols), stevia does not cause significant digestive discomfort.
It is worth noting that some studies suggest that highly purified forms of stevia could potentially alter gut bacteria composition (Ruiz-Ojeda et al., 2019; Lobach et al., 2019), though more research is needed to fully understand these effects. Some criticisms of these studies point to their reliance on animal models or in vitro analyses, which may not fully translate to human effects. If you experience any digestive issues with stevia, consider using it in combination with natural sweeteners like monk fruit or erythritol to see if that helps.
Tips for Baking with Stevia
- Use the right type of stevia – Baking blends work best, as pure stevia is much sweeter than sugar.
- Adjust for texture – Since stevia doesn’t provide bulk like sugar, you may need to add extra moisture or adjust flour ratios.
- Combine with other sweeteners – Some recipes use erythritol or monk fruit alongside stevia for a more balanced sweetness.
- Use almond flour or coconut flour – These low-carb alternatives help create a delicious, moist texture without wheat flour.
- Allow your cake to cool on a wire rack – This ensures even cooling and prevents soggy bottoms.
