Can I soften butter in the microwave?

Normally in baking recipes the answer is No. But in this particular recipe, it works. You don’t necessarily want your butter to be completely melted, though. The easiest way to warm it for this particular recipe is to heat it in the microwave on LOW (30% power) for about 30 seconds.

I don’t have a tart pan. Are there other pans I can use?

I haven’t tested this recipe in any other type of pan, but I suspect a 9-inch cake pan or small pizza pan would work. If the pizza pan has holes in the bottom, be sure to line the bottom with parchment paper as directed in the recipe.

Does this cookie cake have a firm or chewy texture?

It’s definitely soft and chewy chocolate chip cookie cake in the most delightful way. I was actually prompted to develop this recipe because of a recent storebought cookie cake that was overcooked and fairly dry.

Do I have to line the tart pan with parchment paper or can I use cooking spray?

I haven’t tried it with cooking spray, but it should work. 

Can I make a cookie cake from a recipe for regular chocolate chip cookies?

Maybe. I’d recommend using this one since the amounts come out perfectly for this size cake.

Your family will love this Super Easy Homemade Cookie Cake recipe. It was a huge hit at a recent birthday celebration and is so simple to make.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light or dark brown sugar
  • 1/3 cup white sugar
  • 1 large egg, at room temperature
  • 2 tsp. vanilla extract
  • 1  1/2 cups (about 190g) all-purpose flour
  • ​1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • ​1/2 tsp. kosher salt
  • 3/4 cup milk chocolate chips
  • Decorator’s icing (I used storebought)


Instructions

  1. Preheat oven to 350 degrees. Cut a round piece of parchment paper to fit in the bottom of a 9-inch tart pan with a removable bottom (or springform pan); line bottom of the pan with parchment paper round, and set aside.
  2. Add softened butter to mixing bowl of a stand mixer fitted with paddle attachment (alternatively, use an electric mixer and large mixing bowl); add brown sugar and granulated sugar. Cream butter on low speed to medium speed until creamy and well blended. Add egg and vanilla extract to butter mixture and beat 30 seconds. Add dry ingredients (flour, baking soda, baking powder, and salt); beat just until blended, stopping to scrape sides of the bowl, as needed. Beat in chocolate chips.
  3. Spoon dough into prepared pan. With a firm rubber spatula or back of a measuring cup, press dough out into pan, pushing to edges of pan. Using another piece of parchment paper or layer of plastic wrap, place over dough and press cookie dough in an even layer in pan.
  4. Bake in preheated oven 12 to 14 minutes bake time or just until set and barely golden brown. (Do not overbake.) Remove from oven, and place on wire rack. Let cool completely (at least 20-25 minutes).
  5. Remove from cooling rack, and decorate with icing, as desired. Store in an airtight container.

  1. Hands down THE BEST cookie cake I have ever eaten. My daughter and I made this for my husband’s birthday and since then, we have made the recipe 8 times in the last 3 weeks (for friends’ and family’s bday and just for fun). Follow the recipe exactly as written (we used a hand mixer and a springform pan) and you will not be disappointed. People literally told me I should start selling “my” cookie cakes. So yummy!!
