Ingredients
- 4 Tbsp. unsalted butter (1/2 stick of butter)
- 3 cups fresh cherries, pitted or frozen pitted cherries
- 3/4 cup plus 1 tsp. sugar, divided
- 1 cup plus 2 Tbsp. self-rising flour, divided
- 1/4 teaspoon almond extract (optional)
- 1/2 cup heavy whipping cream
Instructions
- Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray, and set aside.
- Melt butter in a large bowl; reserve 1 tablespoon of butter from bowl, and set aside. Add cherries, 1/2 cup sugar, 2 tablespoons of the flour, and almond extract to remaining butter in large bowl, mixing well. Spoon mixture into prepared baking dish; set aside.
- Add remaining 1 cup self-rising flour to large mixing bowl; mix flour with 1/4 cup of sugar. Add heavy cream, and stir just until a soft loose dough forms.
- Drop dough by large spoonfuls onto cherry mixture. Brush reserved 1 tablespoon of melted butter over dough, and sprinkle with remaining 1 teaspoon sugar.
- Bake in preheated oven, uncovered, until cobbler topping is light golden brown, about 25 minutes baking time. Store leftover cobbler in an airtight container.
