90 g (about 3/4 cup) whole-wheat flour
120 g (about 1 cup) all-purpose flour
1 Tbsp. baking powder
1/2 tsp salt
1/2 cup creamy peanut butter
1/4 cup peanut oil
3/4 cup packed brown sugar
2 large eggs, at room temperature
1 1/2 cups vanilla whole-milk Greek yogurt
2 tsp. vanilla extract
Streusel
1/4 cup rolled oats
2 Tbsp. whole-wheat flour
2 Tbsp. all-purpose flour
1/4 cup brown sugar
Pinch of salt
2 Tbsp. creamy peanut butter
2 Tbsp. butter
Icing
3 Tbsp. heavy cream
1/2 cup powdered sugar
1/4 tsp. vanilla extract
Instructions
Prepare the Cake: Preheat oven to 350 degrees F. Spray an 8- x 8-inch baking pan with baking spray, and set aside.
In a large bowl, whisk together flour, baking powder, and salt. Set aside.
In the bowl of a stand mixer fitted with paddle attachment (or with an electric mixer in a large bowl), cream together peanut butter, peanut oil, and sugar on medium-low speed until well combined, about 1 minute. Beat in eggs, one at a time, just until creamy, about 30 seconds per egg. Scrape down sides of bowl, as needed. With mixer on low speed, carefully beat in yogurt and vanilla until smooth, about 30 seconds.
Add dry ingredients to wet ingredients, and beat on medium-low speed just until combined, about 1 minute. Pour batter into prepared pan; set aside.
Prepare the Streusel: In a medium microwave-safe bowl, stir together oats, flours, brown sugar, and salt. Add peanut butter and butter; microwave on HIGH for 30 seconds. Remove from microwave, and stir together, using a fork, until Streusel forms. Sprinkle evenly over top of cake batter.
Bake in preheated oven until a wooden pick inserted in center of cake comes out clean, 40 to 45 minutes. Remove pan from oven and place on a wire rack; let cool completely.
Prepare the Icing: Whisk together cream, powdered sugar, and vanilla. Drizzle evenly over cooled cake.
