PB2 No Bake Cookies

Made with powdered peanut butter, these oatmeal chocolate no bake cookies are a fun twist on the original sweet treat and taste just as good!


  • 1/2 cup butter or coconut oil, at room temperature
  • 3/4 cup fat-free milk or almond milk
  • 1 1/2 cups white sugar* or coconut sugar
  • 3 tablespoons cocoa powder
  • 1/2 cup peanut powder (such as PB2 or PB Fit)
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned or quick oats (use gluten-free oats, if desired)


  1. Melt butter in a large saucepan over medium-low heat; add milk. Whisk together granulated sweetener, cocoa, powdered peanut butter and salt; add to butter mixture and stir until smooth.
  2. Turn heat on stove top to medium, and cook, stirring occasionally, until mixture comes to a full boil. Boil for 1 minute, stirring occasionally. Remove from heat.
  3. Add vanilla and oats to sugar mixture; stir until combined.
  4. Drop by heaping tablespoons or using a small cookie scoop onto a parchment, wax paper or Silpat lined baking sheet. Let cool to room temperature, 1 to 2 hours. Store in an airtight container up to 1 week.


*Swerve is my go-to sugar substitute.
