Homemade Gluten-Free Pecan Squares

My husband and I differ in our preference for what we snag off the dessert table.
I’m not talking chocolate vs fruit or hot vs cold. I’m talking utensil vs fingers.
He insists the best holiday dessert is the one you can pick up with your fingers. Bar cookies, brownies, cookies… you get the picture.
In my humble opinion, he’s clearly wrong. I believe the best holiday classic dessert has to be one that requires a cake server, pie plate, knife, etc. I also think it must need a spoon or fork to eat it.
BUT… being the compassionate cook that I am, over the years I’ve pushed my dessert comfort zone to a place of finger-held dessert inclusion. I mean, marriage is after all full of compromise, right?
So to honor his favorite handheld Thanksgiving dessert, pecan pie squares, I’ve given it a spiffy gluten-free makeover. But don’t be wary of these gluten-free pecan pie bars if you’re not a gluten-free eater… they’re so good, everyone will enjoy them.
As with most of my recipes, they’re not complicated… a must, in my opinion, for the holiday season… or any time of year!


Homemade Gluten-Free Pecan Squares

Description
The taste of classic pecan pie gets a makeover in these gluten-free pecan squares. They’re guaranteed to please every guest at your holiday table!
Ingredients
- 1 cup (120 g) gluten-free flour
- 1/3 cup powdered sugar
- 1/4 cup melted butter or melted coconut oil
- 1 large egg, at room temperature and lightly beaten
- 1/4 cup packed dark brown sugar
- 1/4 cup honey
- 1/3 cup butter or coconut oil
- 1 tablespoon half-and-half
- 2 cups pecan pieces
Instructions
- Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking pan with cooking spray. (Alternatively, line with parchment paper.) Set aside.
- Whisk together flour and powdered sugar; add in 1/4 cup melted butter and egg. Blend until mixture resembles coarse meal. Pat mixture firmly into bottom of prepared pan.
- Bake in preheated oven until edges are lightly browned, about 15 minutes. Let cool 10 minutes.
- While crust bakes, stir together brown sugar, honey, remaining 1/3 cup butter, and half-and-half in a small saucepan. Bring to a boil over medium heat. Stir in pecans, and pour pecan mixture in an even layer over crust.
- Bake at 350 degrees F until golden brown and bubbly, 25 to 30 minutes.
- Let cool completely before cutting into squares, about 2 hours. Store in an airtight container.
