Healthy Bran Muffins

Ingredients

  • 60 g (about 1 cup) high-fiber bran cereal, such as Fiber One or All Bran
  • 1  1/2 cups kefir or buttermilk, divided
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 2 tablespoons canola oil
  • 2/3 cup white whole wheat flour
  • 1/3 cup all-purpose flour
  • 6 tablespoons allulose-based baking blend (such as Lakanto Classic Monkfruit Sweetener with Allulose) or sugar, if preferred
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • Pinch of allspice
  • Pinch of salt
  • Cooking spray

Instructions

  1. In a large bowl, combine the bran cereal, 1/2 cup kefir, and milk. Cover, and refrigerate overnight.
  2. When ready to bake, preheat oven to 375°F. Coat 10 muffin cups with cooking spray.
  3. In a small bowl, whisk together the remaining 1 cup kefir, egg, and canola oil.
  4. In a separate bowl, whisk together the white whole wheat flour, all-purpose flour, baking blend, baking soda, cinnamon, allspice, and salt.
  5. Add the kefir mixture and soaked cereal mixture to the dry ingredients. Stir just until combined.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 20 minutes, or until a wooden pick inserted in the center of a muffin comes out clean.
