Easy Oatmeal Cookies (made without brown sugar)

Description

You’ll absolutely love these Oatmeal Cookies made without brown sugar. Lighter in color, but big on delicious taste, they’re a family favorite at my house.


Ingredients

Cookies:

  • 1/2 cup salted butter*, softened
  • 1 cup white sugar
  • 1 large egg, at room temperature
  • 1/2 Tbsp. vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 cups quick oats, uncooked

Icing (optional):

  • 2 cups confectioners’ sugar*
  • 1/2 teaspoon vanilla extract
  • 2 to 4 Tbsp. milk, divided

Instructions

  1. Preheat oven temperature to 350 degrees F. Line a cookie sheet with parchment paper; set aside.
  2. Cream butter at medium speed using a stand mixer fitted with paddle attachment or in a large bowl with an electric mixer until creamy, about 1 minute; add sugar, beating well. Beat in egg and vanilla; set aside.
  3. Whisk together flour, cinnamon, baking soda, and baking powder. Add dry ingredients to wet ingredients, beating well. Add oats, and beat just until blended.
  4. Drop dough balls by heaping tablespoons (I used this small cookie scoop) onto prepared baking sheet. Bake in preheated oven until set, about 8-10 minutes baking time. (Cookies will not be golden brown without the use of brown sugar.) Let cool on pan 5 minutes; transfer to a wire rack or cooling rack to cool completely, about 10-12 minutes. (Cook in a second batch, if needed).
  5. Meanwhile, if desired, prepare the Icing by whisking together powdered sugar, vanilla and milk, 1 tablespoon at a time, using just enough milk to make a thick icing. Spoon icing into a small ziptop bag; cut 1/4 inch off tip of bag, and drizzle icing over cooled cookies. Store in an airtight container to help preserve the taste of fresh cookies.

Notes

*When using salted butter, these homemade cookies have a slight (and desirable in my opinion) taste of salt underneath the sweetness. If preferred, you can use unsalted butter.
