Easy Low Carb Walnut Coffee Cake

Looking for a low carb walnut coffee cake recipe but find most keto cakes to be too hard and too complicated? This delicious coffee cake recipe is perfect!

A lot of the low carb and keto-friendly baking recipes you see online are simply over-the-top — too elaborate, too involved, and just too much to eat. When I developed this low carb walnut coffee cake, I wanted to create a comfort-food-like snack cake recipe.

Not too much to eat.

Not overly sweet.

I knew it needed to be the kind of sweet treat I could enjoy with my morning coffee or something I could easily eat in the afternoon and still be hungry for dinner.

You’ll also note that this isn’t your run-of-the-mill keto diet recipe. I find so many low carb or keto-friendly recipes to be nothing more than a combo of low-carb flours and a keto sweetener. They lack the complexity of various ingredients and flavors that make desserts irresistible. That’s why this low-carb coffee cake recipe includes chopped apple in the streusel ingredients that make up its crumb topping.

Are Apples OK In Low Carb Baking?

If by “ok” do you mean can they be used and still keep the recipe low carb? Yes!

In the case of this recipe, only 1 apple is used for an entire recipe. In terms of its overall carb contribution, it’s minimal. Plus, what often makes apple desserts higher in carbs is the sugar used in them. This recipe opts for my favorite brown sugar substitute, Swerve brown.

Easy Low Carb Walnut Coffee Cake

Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup walnut or almond flour/almond meal
  • 3/4 cup Swerve, brown
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon Kosher or sea salt
  • 3 large eggs, at room temperature
  • 1/2 cup unsweetened walnut or almond milk
  • 2 tablespoons olive oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract (optional)
  • 2 teaspoons liquid stevia
  • 1 cup chopped walnuts
  • 1 small apple, chopped
  • 2 tablespoons melted butter or melted coconut oil


Instructions

  1. Preheat oven to 350 degrees F. Coat a small cake/pie plate with cooking spray, and set aside. (Alternatively, line the bottom with parchment paper.)
  2. Whisk together coconut and almond flour, Swerve, baking powder, cinnamon, xanthan gum, and salt in a small bowl.
  3. In a separate bowl, whisk together eggs, milk, oil, extracts, and stevia. Add almond flour mixture to wet ingredients, and stir until combined.
  4. Spoon coffee cake batter into prepared pan, and sprinkle walnut and chopped apple over top of the batter; drizzle with melted butter.
  5. Bake in preheated oven until cake is golden brown and set in center*, about 35 minutes. Remove from oven, and let cool at least 10 minutes before slicing. (Store leftover cake in an airtight container in refrigerator).

Notes

*Check doneness of cake with an inserted toothpick in center of the cake. It should come out mostly clean with maybe a few moist crumbs.
