Easy Gluten Free Lemon Poppyseed Muffins
If you’ve been searching for gluten-free lemon poppy seed muffins that don’t require a long ingredient list or a trip to three different grocery aisles, this is the recipe. It starts with a gluten-free cake mix and an instant lemon pudding mix, which means you get bright lemon flavor and fluffy muffins with almost none of the usual fuss. This is genuinely an easy recipe, the kind you can pull together on a weeknight without pulling out measuring cups for a dozen separate dry ingredients.
I’ve tested a lot of lemon desserts over the years, and there’s something about the combination of poppy seeds and a tart lemon glaze that never gets old. This lemon poppy seed muffin recipe leans on that classic pairing while keeping the process about as simple as baking gets.

Why You’ll Love This Muffin Version
- Simple ingredients. No specialty flours to track down, just a gluten-free cake mix, pudding mix, poppy seeds, and pantry basics.
- Fresh lemon flavor in the glaze, made from real lemon juice rather than bottled.
- Best results every time, since the pudding mix keeps the crumb moist and tender even with a shortcut base.
- A tender crumb that holds up well whether you’re serving these fresh or freezing a batch for later.
What You’ll Need
- Gluten-free yellow cake mix (I used King Arthur for this original recipe)
- Instant lemon pudding mix
- Poppy seeds
- Melted butter
- Water
- Large eggs
- Fresh lemon juice, for the glaze
- Powdered sugar, for the glaze
A quick note on ingredients: use room temperature ingredients where you can, especially the eggs, since cold eggs can cause the melted butter to seize up slightly when you’re mixing.

Dietitian Insight
These muffins are a little higher in sugar than some muffins, at about 27 grams each, but they're also meant to be a treat, and a really good one at that. Gluten-free baked goods don't always deliver on flavor and texture, but these absolutely do. They're soft, lemony, and genuinely delicious. If you'd like to cut back on the sugar, the glaze is the easiest place to start. A good bit of the sugar in this recipe comes from the powdered sugar in the glaze rather than the muffin base, so skipping it (or using half the amount for a lighter drizzle instead of a full dip) meaningfully lowers the sugar per muffin without changing the crumb or the lemon flavor.
How to Make Gluten-Free Poppy Seed Muffins
Preheat your oven to 350°F. Line 18 cups across two 12-cup muffin pans with paper liners, or spray them with non-stick spray. Set the prepared pan aside.
In the bowl of a stand mixer fitted with the paddle attachment, combine the cake mix, dry pudding mix, and poppy seeds. Mix for about 30 seconds, just until combined.
Add the melted butter and water to the dry ingredients and beat on low speed just until moistened, about 30 seconds. Beat in the eggs one at a time until the batter turns smooth, then continue beating on low for another minute. You’re looking for a smooth batter with no dry streaks before you move on.
Using an ice cream scoop for even portions, divide the batter among the muffin tin cups.
Bake until the tops are golden brown and a wooden pick inserted into the center comes out clean, 25 to 28 minutes. Let the muffins cool in the pan for 5 minutes, then move them to a wire rack to cool completely before glazing. This step matters more than it sounds like it should: glazing warm muffins just melts the glaze right off instead of letting it set.

Simple Lemon Glaze
While the muffins cool, whisk together the fresh lemon juice and powdered sugar in a medium bowl until smooth. Dip the top of each cooled muffin into the glaze, let the excess drip off, and set it glaze-side up back on the wire rack. Give the glaze a few minutes to firm up before serving or storing. That balance of sweet muffin and tart lemon glaze is honestly the best part of this whole recipe, a perfect balance of tangy and sweet in every bite.
Storage Tips
Once the glaze has fully set, store the muffins in a single layer in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. For longer storage, freeze the un-glazed muffins in a freezer-safe container or freezer bag for up to 2 months, then thaw and glaze fresh before serving. If you’re stacking muffins for the freezer, a layer of plastic wrap between them keeps the tops from sticking together.

Super Easy Gluten Free Lemon Poppy Seed Muffins
- Total Time: 35 minutes
- Yield: 18 muffins
- Diet: Gluten-Free
Description
Soft, tender gluten free lemon poppy seed muffins with a tart lemon glaze. An easy recipe with simple ingredients, ready in about 30 minutes.
Ingredients
- Muffins:
- 1 (22-oz) box gluten-free yellow cake mix (I used King Arthur)
- 1 (3.4-oz) box instant lemon pudding mix
- 2 tablespoons poppy seeds
- 1/2 cup melted butter
- 1 cup water
- 3 large eggs
- Glaze:
- 3 tablespoons fresh lemon juice (from 1 to 2 fresh lemons)
- 1 1/4 cups powdered sugar
Instructions
- Preheat oven temperature to 350 degrees F. Line 18 muffin cups with muffin liners (I used 2 [12-cup muffin pans) or spray with non-stick spray; set muffin pans aside.
- Prepare Muffins – Add dry ingredients (cake mix, dry pudding mix, and poppy seeds) to a large bowl of a stand mixer fitted with paddle attachment; mix 30 seconds or until combined.
- Add wet ingredients (butter and water) to dry ingredients in bowl; beat on low just until moistened, about 30 seconds. Beat in eggs, one at a time, until smooth, and continue beating an additional 1 minute on low.
- Using an ice cream scoop, scoop muffin batter evenly among muffin cups in prepared pans.
- Bake in preheated oven until tops are golden brown and a wooden pick inserted into center of a muffin comes out clean, 25 to 28 minutes. Remove muffins from oven, and let cool in pan 5 minutes. Remove muffins from pan, and place on a wire rack to cool completely.
- Prepare Glaze – Meanwhile, whisk together lemon juice and powdered sugar. Dip muffin tops of each cooled muffin in Glaze and let excess drip off muffin. Place dipped muffins back on wire rack and let stand until Glaze is dry. (Discard any unused Glaze).
Notes
Nutrition information is calculated assuming about 1/3 of the glaze is discarded during dipping, which is typical, but the exact amount that ends up on the muffins can vary depending on how thickly each one is coated.
