Easy [Copycat] Strawberry Crumbl Cookie Recipe

  • 1 (15.25-oz.) box strawberry cake mix
  • 1/2 cup butter, melted
  • 2 large eggs, at room temperature
  • 1/3 cup powdered sugar


  • 1 1/2 cups powdered sugar
  • 2 Tbsp. strawberry jam
  • 2 Tbsp. plus 1 tsp. half-and-half
  • Sliced fresh strawberries (optional)


  1. Prepare the Cookies: Beat cake mix, butter, and eggs in a large bowl with a hand mixer or in a stand mixer fitted with paddle attachment. Cover, and place dough in refrigerator to chill until firm, about 20 minutes. Meanwhile, preheat oven to 350°F. Line a baking sheet or cookie sheet with a silpat baking mat or parchment paper; set aside.

  2. Portion chilled dough into 8 (1/4-cup) balls using a large ice cream or cookie scoop. Place 1/3 cup powdered sugar in a small bowl. Roll each dough ball in powdered sugar.

  3. Space 4 dough balls out evenly on lined baking sheet, and gently press down on tops of each dough ball with the palm of your hand to create thick disks. (Cookies will spread into large cookies, like the classic “crumbl” giant cookie size.)

  4. Bake in preheated oven until edges are set, centers are no longer doughy, and top of each cookie has a crackled appearance, about 14 minutes bake time.

  5. Let cool on pan until set, about 10 minutes. Carefully transfer to a wire rack to let cool completely. Repeat process with remaining cookie dough (discard unused powdered sugar in bowl.)

  6. While cookies cool on cooling rack, prepare the Icing: Place 1 1/2 cups powdered sugar in a medium bowl; add strawberry jam and half-and-half. Stir until smooth. Spoon a heaping spoonful of Icing onto top of the cookie, and spread evenly. Repeat process with remaining Icing and cookies. (Alternatively, place Icing in a piping bag, and pipe in a circular swirl pattern to create a classic “crumbl” cookie top.) Garnish each of the baked cookies with a strawberry slice, as desired, just before serving. (Icing will harden as cookies stand.) Store leftover, ungarnished cookies in an airtight container.
