Easy Cake Mix Blueberry Crumble Bars

An easy dessert recipe that starts with a dry cake mix. The whole family will love this simple dessert.


  • Cooking spray
  • 2 cups fresh blueberries or other fresh berries (or frozen)
  • 1/2 cup white sugar
  • 1 (15.25-oz.) pkg. classic yellow cake mix, vanilla cake mix or lemon cake mix
  • 1 cup melted butter
  • 1 cup dry old-fashioned oats
  • 1/2 cup packed brown sugar
  • 2 large eggs, at room temperature
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla
  • 1 tsp. lemon zest (optional)
  • 1/4 cup powdered sugar (optional)
  • 1 Tbsp. fresh lemon juice (optional)


  1. Pre heat oven to 350 degrees Fahrenheit. Line a square baking pan or baking dish with parchment paper or aluminum foil, leaving a 1-inch overhang over opposite sides; coat bottom of the prepared pan with cooking spray, and set aside. Combine blueberries and granulated sugar in a small bowl; set aside.
  2. Add cake mix, butter, oats, brown sugar, eggs, cinnamon, vanilla, and lemon zest, if desired, in large bowl of a stand mixer. Beat at low speed 1 minute, stopping to scrape down sides as needed. (Batter will be thick.) Spoon a little over half of the mixture (2 cups of batter) into prepared pan; carefully smooth to edges of pan. Top with an even layer of the blueberry mixture. Drop remaining batter by tablespoons evenly over top of batter, and carefully smooth with a small offset spatula or back of spoon. (There will be spaces that remain uncovered by batter.)
  3. Bake in preheated oven until top of the bars are browned and set, about 45 minutes baking time. Meanwhile, combine powdered sugar and lemon juice, if desired to use as glaze.
  4. Remove bars from oven; place on a wire rack, and let cool at least 30 minutes. Carefully lift bars from pan using parchment paper overhang or ends of foil. Cut into bars, and store in airtight container or cover tightly with plastic wrap.
