We don’t entertain a lot around my house these days. I dunno if it’s my unmillennial status or just the reality of this life stage, but it’s rare that we have guests over.  When we do, though, I rely on EASY recipes… like this easy strawberry-topped brie I’m sharing with you today.

Do I need to cut the top off the brie?

You’ll often see this called for in various brie appetizer recipes. But it is not needed in this particular recipe.

Can I use fresh rosemary in place of the dried rosemary?

Yes. The general rule of thumb when replacing fresh herbs for dried is to use 2 to 3 times as much fresh herb as dried. So for this recipe, you’d 1 1/2 teaspoons chopped fresh rosemary.

Easy Brie Appetizer With Strawberries

Topped with a tasty mixture of fresh strawberries, this quick and easy brie appetizer recipe will wow your guests.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 teaspoon dried rosemary
  • Pinch of salt
  • 1 cup fresh strawberries, sliced
  • 1 tablespoon balsamic vinegar
  • 1/4 cup orange juice
  • 1 tablespoon strawberry preserves
  • 1 round of brie, at room temperature or warmed slightly


Instructions

  1. Heat oil in a skillet over medium-high heat. Add onion and saute 5 minutes or until tender. Sprinkle with rosemary and salt; cook an additional 2 minutes. Add strawberries and saute 2 more minutes. Add in vinegar, orange juice, and preserves, stirring well and cooking until thickened (about 10 minutes).
  2. Place brie on a small plate; remove strawberry mixture from stove and pour over brie. Serve with crackers or crostini.
