…this 3 Ingredient Pumpkin Bread is proof that a box of cake mix is a game changer in its own right.

I’ve seen recipes floating around for easy pumpkin muffins and pumpkin cookies using yellow cake mix, but those require that you spice up (i.e. MORE ingredients needed) the mix.
Starting with a box of spice cake mix cuts down on the ingredients needed. That’s especially true when using the gingerbread cake mix. It’s full of pumpkin pie spice inspired flavors. All that’s needed is the canned pumpkin. (Oh, and 2 eggs plus a little water.)
It may not be the time of year to start celebrating all things pumpkin just yet. But who can argue that great ideas with simple ingredients are worth making year-round?
Can I make 3-ingredient pumpkin muffins with this recipe instead?
I haven’t tested this in a muffin tin, but I suspect it would work really well. Be sure to divide the batter evenly, and watch the time starting at around 30 minutes.


Easy 3 Ingredient Pumpkin Bread Recipe

Description
Have homemade pumpkin bread in just a few simple steps. This 3 Ingredient Pumpkin Bread is so easy to make!
Ingredients
- 1 (14.5-oz.) pkg. gingerbread cake and cookie mix (such as Betty Crocker)
- 1 cup canned pumpkin* (from 1 can of pumpkin puree)
- 2 large eggs, at room temperature
- 1/2 cup water**
Instructions
- Preheat oven to 350 degrees F. Line an 8-inch loaf pan with parchment paper leaving a 1-inch overhang on long sides. Spray parchment paper with cooking spray; set aside.
- Beat gingerbread mix, pumpkin, eggs, and water in a stand mixer or with a hand mixer on medium speed in a large mixing bowl until well blended, about 1 minute. Spoon into prepared loaf pan.
- Bake in preheated oven until a wooden pick inserted in top of the bread comes out mostly clean with a few moist crumbs, 50-60 minutes. Remove from oven, and let cool in pan 10 minutes on a wire rack. Carefully lift bread from pan using parchment paper overhang, and place on wire rack. Let cool completely. Store in an airtight container or wrap in plastic wrap.
