I also use the dough cycle sometimes instead of traditional stretch and folds when making my Foolproof Sourdough recipe. Using the “dough” cycle also works well in my Easy Sourdough Sandwich Bread recipe. This method saves time and effort while still developing the gluten structure needed for a perfect loaf. It’s a great way to streamline sourdough baking without sacrificing quality. (It’s worth noting, though, that I don’t do any of my bulk fermenting in the bread machine. Once the kneading is finished, I turn it out into a bowl and cover, following the natural bulk ferment life cycle of sourdough take over from there.)
