If I don’t have a bread machine, can I make these dinner rolls in a stand mixer?

Yes. To make these dinner rolls in a stand mixer, you’ll use your dough hook to mix and knead the ingredients into a bread dough. Let dough rise, covered, in a warm place until almost doubled in size, 45 minutes to 1 hour. Then proceed with shaping and the second rise as outlined below.

Can I substitute olive oil for the melted butter?

While I haven’t tested the original recipe with olive oil, I suspect it will create similar soft dinner rolls.

What bread machine do you have?

I bought this T-fal Bread Maker a few years ago and love it. Unfortunately, it appears to be out of stock on Amazon. If you’re in the market for a bread maker, the main function I would look for is a “dough” setting. Here is a Cuisinart Bread Maker that would be a good choice.

Description

You must try this easy kitchen hack for Bread Machine Dinner Rolls. They’re deliciously irresistable buttery fluffy rolls!


Ingredients

  • 1/4 cup tap water
  • 3/4 cup 2 % reduced-fat milk
  • 1/4 cup melted salted butter, plus more for brushing
  • 330 g* bread flour or all purpose flour, plus more for work surface
  • 1 1/2 Tbsp. granulated sugar
  • 1 tsp. kosher salt
  • 1 1/4 tsp. active dry yeast (about 1/2 envelope)

Instructions

  1. Layer all ingredients in your bread maker in the order specified by the manufacturer (see Notes). Start “dough setting”. (Be sure you’re on the “dough” cycle so that it doesn’t proceed onto the baking cycle.)
  2. When Dough is ready (has proofed [first rise] once in the bread machine), remove from bread machine pan, and turn out onto a lightly floured surface. Lightly shape into a circle/disk. Using a sharp knife, pizza cutter or bench scraper, divide dough into 12 equal pieces. Shape each portion into a ball shape, pulling down slightly to cup dough at bottom and cupping/turning to smooth top of dough. (This is similar to shaping a round artisan loaf, creating a slight bit of smoothness and surface tension on top making a smooth ball.) Transfer to a square baking dish coated with cooking spray. Brush with melted butter. For final rise, cover loosely with plastic wrap or a moist tea towel, and place in a warm spot free from drafts. (I proof in my air-fryer on the 80 degree F “proof” setting). Let dough balls rise until doubled in size, about 1 hour. Meanwhile, preheat oven to 350 degrees F.
  3. Uncover and bake rolls in preheated oven until golden brown on top and cooked through (about 190 degrees F internal temperature when measured with a thermometer), about 20 minutes. Remove from oven and brush with melted butter. Let cool on a wire rack. Serve warm or at room temperature. Store leftover rolls in an airtight container.

     

Notes

*I highly recommend you weigh your flour for best results. If you prefer to use cup measures, use 2  3/4 cups of flour that has been stirred in its container/bag, spoon lightly into the measuring cup, and scraped off even with a knife.

Also note, both of my bread makers require putting the wet ingredients in first, then topping with dry ingredients. This helps ensure all of the drying ingredients get incorporated into the day.
