Banoffee Bread

Inspired by the famous banoffee pie, this Banoffee Bread is equally as irresistible! With a toffee-inspired icing layer, it’s next-level delicious banana bread! 

I can’t remember where I first tried banoffee pie. But I can remember being blown away by its deliciousness. It took me a while to understand the name “banoffee” since so many references on the pie include caramel… rather than the rightful inclusion… toffee.

Toffee and caramel are similar, so it’s easy to see why the more common caramel gets referenced. But honestly, it makes so much more sense when you realize “banoffee” is just a banana-toffee combo.

And while it’s irresistible in pie, it’s just as amazing when turned into this easy quick Banoffee Bread:

Since it makes two loaves, this recipe is perfect to make and share with a friend. Banana bread never tasted better!

It’s worth noting that these are fairly small loaves. The batter is a bit too much for one quick bread. So don’t be tempted to cook this recipe in just one loaf pan (or you’ll have a pretty big mess on your hands!)

Description

My family loved this Banoffee Banana Bread and yours will too! Just before serving, garnish with fresh banana slices and toffee bits.


Ingredients

LOAVES

  • Baking spray with flour
  • 1 cup butter, softened
  • 3 large eggs, at room temperature
  • 1 cup brown sugar
  • 1 (15.25-oz.) box yellow cake mix
  • 1/2 teaspoon cinnamon
  • 3/4 cup water
  • 3 medium-size ripe bananas mashed (about 1 1/4 cups mashed bananas)

TOFFEE SAUCE

  • 6 Tbsp. unsalted butter
  • 3/4 cup light brown sugar
  • 3 Tbsp. milk
  • 1/2 tsp. vanilla extract
  • 1 cup sifted powdered sugar

Instructions

  1. Prepare the Loaves: Pre heat oven to 350 degrees F. Coat 2 loaf pans with baking spray; set aside.
  2. Add butter and brown sugar to large bowl of a stand mixer (or alternatively use an electric hand mixer). Beat with paddle attachment on medium speed until light and fluffy, about 2 minutes. Add eggs, 1 at a time, and beat well after each addition. Beat in bananas and water until smooth. Add cake mix and cinnamon; beat on medium speed until well blended, about 2 minutes.
  3. Divide batter evenly among prepared pans, and bake in preheated oven until a wooden pick inserted in center of comes out clean and the top is golden brown, about 45 minutes. Remove from oven, and place pans on a wire rack. Let cool 10 minutes; loosen from sides of the pan and let cool on wire rack to room temperature, about 2 hours.
  4. Prepare the Toffee Sauce: Add butter, brown sugar, and milk to a medium-size sauce pan. Cook over medium low heat until butter is melted, stirring occasionally. Increase to medium heat, bring to a boil, and boil vigorously for 1 minute. Remove from heat; whisk in vanilla extract.
  5. Whisk in powdered sugar, 1/2 cup at a time, whisking vigorously until smooth. (Icing will be very hot.) Working carefully and quickly, pour over top of each banoffee loaf, using an offset spatula, as needed, to smooth Icing across top of the cake to edges. Cut into thick slices. Store leftover bread in an airtight container or freezer bags.
