Yes, although you may notice more tartness and firmness when cooking with Granny Smith apples.

Tossing apples with lemon juice (which contains vitamin C) in a separate bowl helps to prevent browning.

Can I use a yellow cake mix in place of the white?

It will work, but I do find that yellow cake mixes have a distinct flavor. This is a very simple recipe where you want the subtle flavor of the butter blend (which will remind you of apple pie spice) to be most prominent. My preference is the white cake mix.

If I don’t have an 8-inch springform pan, what else can I use?

My first choice would be a Bundt pan. I suspect a basic cake pan wouldn’t hold all of the batter. If you don’t have a Bundt pan, try a 13- x 9-inch baking dish or baking pan. I recommend reducing the oven temperature by 25 degrees F, though, if you’re using a glass baking dish.

  • 3 large eggs, at room temperature
  • 2 Honeycrisp fresh apples, cut into 1/2-in. pieces (about 2 cups)
  • 1 (15.25-oz.) box classic white cake mix
  • 1 (6.5-oz.) tub cinnamon sugar butter spread, warmed 10 seconds in microwave (I used Land O’Lakes)
  • Vanilla ice cream (optional)


  1. Heat oven to 350°F. Coat bottom (but not sides) of an 8-inch springform pan with baking spray with flour or cooking spray.
  2. Add eggs and butter spread to the bowl of a stand mixer fitted with the whisk attachment. Start on low, then raise the speed to medium-high, and beat until mixture is smooth, about 2 minutes.
  3. Beat cake mix into egg mixture until combined, about 1 min. Add apples, and fold in with a spatula. Scrape cake batter into prepared pan, smoothing top of the cake with an offset spatula.
  4. Bake in preheated oven until top is golden brown and a wooden pick inserted in center of cake comes out clean, about 1 hour. Cool in pan on a wire rack 30 minutes. Run a knife around edge of entire cake to loosen from sides of pan; unlatch outside of springform pan. Slice, and serve with a scoop of vanilla ice cream, if desired. Store in an airtight container.
